I big ol' puffy heart tuna salad.

I have ever since I was a kid and it is really one of my favorite quick and easy lunches for the days when I am working and feel like I am going a million miles an hour in ten different directions.

Which is most days really, but, now that I am on keto, and reallllllly trying to be a good girl. I need to have some super safe lunch ideas that I can grab and go with while my brain is on autopilot,

So I started poking around to see if I could manipulate tuna salad, one of my standard faves, into a keto lunch that I could nibble on, or have a ton of, without any guilt.

TADA!!

Now I can grab a couple of these super cute little artisanal romaine lettuce leaves, or one regular leaf if you can't find these guys, pile on my tuna salad, and get on with my day with a happy tummy!

Substitutions

  • Veggies - I chose the vegetables and herbs that I thought would bring texture and taste without adding a ton of carbs but you are free to add or remove anything you think would add to this tuna salad recipe.
  • Mayo - I know some people are not fans of mayo so feel free to substitute mashed avocado, sour cream, or Greek yogurt for the mayonnaise.
  • Mustard - feel free to use whatever mustard you prefer.

🍽 Equipment

There is no special equipment needed to make this Keto Tuna Salad. Just a mixing bowl, measuring cups and spoons, and a spoon!

Storage

    Can I just say...I was a little hesitant to try a tuna salad recipe that wasn't my mom's because my mother's recipe can't be beaten. The only thing wrong with it? Sweet pickles. This recipe is SO delicious and it follows the ratio of fats/protein/carbs for the keto diet PERFECTLY! And it tastes magnificent! Thank you for sharing!
