"The original inspiration for this was my recipe #423395 from the Usborne Children's World Cookbook that Gramma gave my son when he first started learning to cook. This version was created when I was soaking the oats one night when DS mentioned that he'd eaten the last apple. He didn't know I had plans for it in the morning. The next morning I used strawberries instead and whatever else was on hand & this recipe was born. :) Muesli is a healthy breakfast cereal, originally created by a Swiss doctor, made up of grains, fruit and nuts. Cook time includes overnight softening of the oats, as there is no actual cooking for this recipe."

ingredients

  • 3 tablespoons rolled oats (bulk section of supermarket)
  • 6 tablespoons water
  • 6 strawberries
  • 1 tablespoon lemon juice
  • 1 tablespoon dried cranberries (I used Pomegranate flavored)
  • 1 tablespoon pecans, chopped
  • 1 tablespoon clear honey

directions

  • Before you go to bed, put the oats into a large bowl and pour the water on top.
  • In the morning, remove stems from strawberries and chop the fruit into 1/2 inch pieces.
  • Gently stir strawberries, lemon juice, cranberries and pecans into the softened oats.
  • Divide the muesli into four bowls and drizzle some honey on top of each serving.

  1. I threw in some flax seeds 'cause I have a ton and they're very good for you. I wasn't sure I'd like this without some cinnamon or brown sugar thrown in, but it was good! A much better way to start the day than everyone's usual sugary cereals. I may add in a few things next time just to see what happens, and I'm definitely going to try the apple version, too. I added about a 1/4 teaspoon of lemon zest to the oats and water instead of lemon juice, and the dried cranberries as well as I like them when they're re-hydrated. I toasted some sunflower seeds and almond pieces (not a big pecan fan) and added those in the morning with the strawberries and honey and a spoonful of still warm homemade yoghurt. I think I was in breakfast heaven! Will definitely making this often and trying different fresh fruits such as blueberries, mangoes and raspberries. I made a big batch and kept the leftovers in the fridge. I do like it slightly warm so a quick 30 seconds in the microwave before adding my yoghurt. Thanks so much for another deliciously healthy recipe Tink!! Made and enjoyed for PAC Spring 2011.
