this recipe

Erik and I always joke about how we used to not like coconut at all. Pssst… don’t tell my mom! She’ll have my hide for that. 😉 Growing up, us kids ate all kinds of coconut: coconut cream in traditional Vietnamese desserts, sweetened coconut flakes from the gift boxes given out during Lunar New Year, and that ah-mazing coconut cake from Pepperidge Farm. You know the one I’m talking about.

But I was never a fan of coconut. That is… until I started vegan + paleo + gluten free baking. Turns out coconut is EVERYWHERE. Coconut oil in vegan chocolate chip cookies, coconut sugar in paleo vegan brownies, coconut flour in paleo chocolate almond butter bars.

And you know what occurred to me after I baked and extensively ate all of those things? They all had chocolate in them. Eureka!!! That’s how I came up with the idea for No Bake Chocolate Coconut Bars. Turns out, chocolate + coconut = delicious dessert delight.

And if there’s anything I love more than dessert, it’s cheesy alliterations! Hehe.

So that’s my long-winded way of saying, here’s how I came up with this perfect combo of chocolate + coconut. Welcome to my: Dairy-Free Coconut Flour Cookie Dough Recipe!

You ready to have ALL, er… most, of your questions answered about this ah-mazing, perhaps best vegan cookie dough recipe? Let’s do it!

How to Make thisDairy-Free Coconut Flour Cookie Dough Recipe

This paleo vegan cookie dough recipe is almost astonishingly easy to make–with just two, tops, three steps! Simply add all ingredients except the chocolate chips to a bowl. Stir and fold until cohesive and well-mixed. Fold in the chocolate chips and voila! You’re ready to enjoy. 🙂 Could it be any easier? (Said in Chandler’s voice, of course.)

Substitution Notes for Healthy Almond Flour Chocolate Chip Cookie Dough

  • Almond flour/Coconut flour: I do not recommend subbing either of these ingredients. If you’re looking for an oat flour substitute, try this healthy vegan cookie dough recipeinstead. They’re made with oat flour, vegan + gluten-free.
  • Maple syrup: sub with your favorite sweetener, with varying results.
  • Coconut oil: the closest sub would be melted vegan/dairy-free butter

How to Store Edible Paleo Vegan Cookie Dough

One of my favorite aspects of this dairy free cookie dough recipe is that is stays soft for days! To store, place in an airtight container. Store at room temperature, in a cool, dark environment. Direct sunlight always spoils food, so avoid it! 😉 Though you might be tempted to store this edible cookie dough in the fridge, don’t! Lol. I did for a test run and it hardened up like no other.

  1. Oh my goodness! I am so glad that I stumbled across this recipe tonight! I will definitely be making it for a gluten free friend coming to town soon. Any ideas how I could substitute cassava flour for the almond flour? Would that even work? I have to avoid nuts at this time and I’m new to using coconut flour, so any advice you have is greatly appreciated! Thanks so much Demeter!

Is coconut flour paleo? ›

Coconut flour is a delicious ingredient packed with healthy minerals and nutrients. This gluten-free flour is a fantastic substitution for processed white or whole-grain flour, meaning it's Paleo-approved.

How to substitute coconut flour for gluten-free flour? ›

Use a 1:4 ratio when substituting coconut flour with all-purpose flour. This means that for every 1 cup of regular flour, you only use ¼ cup of coconut flour. Following this ratio will help make your low-carb baked goods come out the way you hope.

How much almond flour to replace 2 tablespoons of coconut flour? ›

The best ratio is 3:1 almond flour to coconut flour. This low carb flour substitution closely mirrors all-purpose flour without the need for additional eggs. Keep the liquid ingredients at the same ratio suggested for coconut flour, as it will still need the extra moisture.

How do you thicken gluten-free cookies? ›

Chill the cookie dough for at least 12 hours

If you want your cookies to stay thick, you'll need to chill them at least until they're cold. And if you want the cookies to have that beautiful caramel flavor that the best chocolate chip cookies have, you'll need to chill them for at least 12 hours.

What is the closest gluten-free flour to all purpose flour? ›

Brown rice flour is about as close to a 1:1 substitute for all-purpose flour as it gets since it provides structure and a “wheat-like” flavor.

What is the difference between Paleo flour and gluten-free flour? ›

First of all, anything that is Paleo is automatically gluten-free as well. The Paleo diet excludes gluten and other grains (like oats, rice and corn), legumes (like soy, peanuts and beans), dairy, refined oils (like canola, soybean, cottonseed) and sugars.

Why combine almond flour and coconut flour? ›

Coconut Flour Blends

The dryness of the coconut flour offsets the moisture and fat in the almond flour. It can also help lower the carb and calorie count. For a recipe such as my Keto Texas Sheet Cake, I use 2 cups of almond flour and ⅓ cup of coconut flour. This ratio works well and gives the cake a finer crumb.

Which is cheaper coconut or almond flour? ›

Conclusion: Coconut flour is versatile, cheaper, healthier, has better omega 3:6 ratios, and is far lower in carbs than almond flour.

Does almond flour taste like coconut? ›

The two flours also have slightly different tastes. Coconut has a more generic, slightly sweet flavor, while almond flour (unsurprisingly) has a distinct almond taste. These characteristic flavors can sometimes be great — they can be delicious in cookies, pancakes, mug cakes, and keto bread recipes.

What is the best gluten-free flour for cookies? ›

What's the best gluten-free flour for baking? Bob's Red Mill gluten-free 1-to-1 baking mix is my favorite gluten-free all-purpose flour blend for baking. It has a mild texture and plenty of "stick" thanks to a blend of sweet rice flour, brown rice flour, and sorghum flour, plus some starches and xanthan gum.

Should I add xanthan gum to gluten-free cookies? ›

Using xanthan gum helps provide some of the stickiness that gluten free goods lack, replacing some elasticity. Xanthan gum mimics some of gluten's most essential properties by sticking to flour and its moisture. This helps create moist goods that hold their shape after being baked.

How do you keep gluten-free cookies from crumbling? ›

Use a Binder. Binders like xanthan gum and guar gum provide structure in gluten-free baking to make up for the missing gluten. This prevents cookies from being too crumbly plus it also helps with freshness.

What flours are Paleo-friendly? ›

Popular (and delicious) paleo substitutes for wheat flour include almond flour, coconut flour and cassava flour.

Is coconut OK on Paleo? ›

Coconut is one of the most versatile Paleo kitchen staples around: from one plant, you can have a stable high-heat cooking oil, a creamy dairy substitute, a crunchy snack, a gluten-free, low-carb flour substitute, and a delicious “butter” to eat straight off the spoon.

What is a Paleo substitute for oat flour? ›

Cassava Flour. Cassava is a root vegetable similar to a potato that can also be made into flour. This is a good sub for oat flour in baked goods because of its light, slightly grainy texture. Cassava is also naturally gluten-free and can be substituted 1:1 for oat flour.

What is a Paleo substitute for almond flour? ›

Cassava Flour

The newfound darling in the paleo world! Made from the cassava root, it is soft, powdery, and very similar to wheat flour. In most cases, you can substitute cassava flour at a 1:1 ratio for almond flour.
