“Easy, moist red velvet cake recipe full of Southern charm with a secret ingredient! Frosted with Cream Cheese frosting!”

Watch me make this Easy, Moist Red Velvet Cake from start to finish!

There is something so elegant about a red velvet cake. Maybe it’s the name or that beautiful, bold red color. Or maybe it’s the delicate crumb and light chocolatey flavor with a tad bit of tang from the buttermilk.

Whatever it is, I’m totally present for all things RED VELVET!!! Red Velvet Pound Cake anyone??

I’ve been getting a lot of requests for red velvet cake. Being from the south my recipe options were endless. I swear everybody in my family has their way of making red velvet cake and to them, it is the best!!

Hooooowever, I still knew that the perfect red velvet cake was still out there somewhere.

BEST Southern Red Velvet Cake Recipe (1)

I have been on the search for the best homemade red velvet cake recipe for a while now actually. I wanted one that was easy, super moist, melt-in-your-mouth soft with that signature light chocolatey buttermilk red velvet flavor.

I’ve tried a few recipes that were…OK. Nothing that really blew my heels off though. Until I played around with merging three recipes (God I love chemistry when it cooperates) and out came THE MASTERPIECE!!! Or at least we think so in my house!

What is red velvet cake?

Before we talk about what red velvet cake is, it’s important to establish what it’s NOT! Red velvet cake is not just a chocolate cake with red food coloring. Traditional red velvet cake started as a buttermilk chocolate cake that is has a signature reddish hue from the cocoa powder. The modern take on classic red velvet cake uses red food coloring to enhance the natural redness of this cake and turn it into bold red color.

What does red velvet cake taste like?

Red velvet cake tastes like a light chocolate cake with vanilla buttermilk notes. It’s a signature flavor that is well-loved in the south. Velvet cakes have a tender crumb and always consist of buttermilk and distilled vinegar. Check out this lemon velvet cake below for a different spin!

BEST Southern Red Velvet Cake Recipe (2)

This red velvet cake recipe is SUPERB!!!! And it passes the stick to the back of the fork test like a champ!

Adding a bit of coffee to the batter isn’t “traditional” for red velvet cakes but it adds another layer of flavor and really hypes up the chocolatey taste to perfection. Not to mention the extra liquid makes this cake do doggone soft so don’t skip it!

Even if you have to run to Mickey D’s or the gas station to get a cup of coffee! I prefer flavored coffee. When I make this cake for people I always use vanilla biscotti or chocolate-flavored coffee. But plain will do just fine too.

Oh and don’t worry, you can’t taste the coffee.

How To Make The BEST Red Velvet Cake

  1. Be sure to generously grease your pans (with shortening) and give them a light dusting of flour. This will ensure that the cake doesn’t stick to the pan.
  2. Use plain prepared coffee. Yep just brew up a cup of coffee. No need to add sugar or cream. I normally use a light or medium roast Alternatively, you can use hot water but…coffee is so much better.

What Cream Cheese Frosting should I use?

Originally I used THIS cream cheese frosting! It’s light, airy, simple, and delicious!

But then I switched to THIS cream cheese frosting and it’s my new favorite!

BEST Southern Red Velvet Cake Recipe (4)

I love a tangy frosting so it’s packed with cream cheese and much thicker in texture. However, if you beat it like crazy it does fluff up quite nicely. If you aren’t a fan of this bold cream cheese-flavored frosting then go with the first recipe.

I hope that you guys enjoy this red velvet cake as much as I do. Lord knows I didn’t want to make this cake AGAIN this week…but I have to give my readers what they demand…..and now I have all this cake…. that I have to eat all by myself…..*sigh* oh well….life is tough like that sometimes. : )

FAQs

What is the best cocoa powder for red velvet cake? ›

The Best Cocoa for Red Velvet Cake Is Natural Cocoa

Natural cocoa is the best cocoa for red velvet cake for two reasons. With a higher acidity, natural cocoa works with the cake's baking soda and buttermilk to leaven the cake to a tight, tender crumb. The results are an almost melt-in-your-mouth tender cake.

What makes red velvet cake taste so good? ›

While red velvet cake is technically a cocoa cake, there is a key difference between standard chocolate cake and red velvet cake. Chocolate cake recipes traditionally use Dutch-processed cocoa, while red velvet cake uses unprocessed cocoa, a more acidic ingredient that produces a deeper, more intense chocolate flavor.

Why add white vinegar to red velvet cake? ›

When bakers added vinegar, baking soda, or buttermilk to their recipes to tenderize the cakes, the acid in those ingredients reacted with the cocoa, which was not Dutch-processed, to give the cakes a red tint. That color became a signature of velvet cakes.

Why is my red velvet cake not moist? ›

Fat is essential for keeping baked goods moist and tender. If you use too little fat in your red velvet cake recipe, the cake can turn out dry. Make sure to use the amount of fat specified in your recipe, and do not substitute with lower-fat ingredients.

What cocoa powder is best for moist cake? ›

I use a dark, unsweetened cocoa powder for maximum chocolate richness. You can use Hershey's Unsweetened Cocoa powder if you wish. Remember: the darker the cocoa powder, the richer and darker the cake. Do not substitute the oil for melted butter.

What happens when you add cocoa powder to cake mix? ›

A small amount will be fine, but if you try to add enough to make it significantly chocolate flavored, you'll throw off both the wet/dry ratio and the acid chemistry of the mix, and probably end up with an unsatisfactory cake.

Why does my red velvet cake taste bitter? ›

Unfortunately some red food colours have a bitter taste because of the ingredients used, particularly the colourant red #3 (E127). So it may help to check the ingredients of the red food colour or use a red food colour paste that is sold as "no taste".

What is the actual Flavour of red velvet cake? ›

What flavor is red velvet? While there are cocoa undertones, red velvet is not chocolate cake because it balances both chocolate and vanilla flavors. It contains cocoa but not the same quantity as traditional chocolate cake, resulting in a more subtle cocoa flavor and tanginess due to the buttermilk and vinegar.

What is real red velvet cake? ›

Red velvet cake is traditionally a red, crimson, or scarlet-colored layer cake, layered with ermine icing. Traditional recipes do not use food coloring, with the red color possibly due to non-Dutched, anthocyanin-rich cocoa, and possibly due to the usage of brown sugar, formerly called red sugar.

What if I forgot vinegar in red velvet cake? ›

If you don't want to use vinegar, you can substitute an equal amount of lemon juice. If you want to skip the acidic liquid altogether, you can substitute a tablespoon of baking powder for each teaspoon of baking soda. Then add water equal to the amount of vinegar you omitted.

Which vinegar is best for cakes? ›

Red velvet cake recipes usually call for buttermilk and a little bit of white vinegar, to give the cake some tang. Since it's acidity your after, rather than a distinct flavor, when baking, plain white vinegar is most likely the ingredient you are going to use.

How do I make my red velvet cake more red? ›

Some ways to do this is by substituting baking powder in place of baking soda, using a natural non-alkalized cocoa powder, adding more white vinegar or buttermilk to your red velvet recipe, to achieve a bright red color.

Which is better, baking soda or baking powder? ›

When to use which one. Baking soda is used in recipes that also include an acidic ingredient, such as cream of tartar, buttermilk, or citrus juice. Conversely, baking powder is typically used when the recipe doesn't feature an acidic ingredient, as the powder already includes the acid needed to produce carbon dioxide.

How to tell if red velvet cake is done? ›

The spring test

The best way to check if the cake is springy is to gently press down on the cake with two fingers, it should naturally spring back. This is a good sign that the cake is properly cooked in the middle and ready to take out of the oven.

What cocoa powder is best for baking? ›

“When it comes to baking, I prefer Dutch process cocoa powder,” says former BA food editor Claire Saffitz. “The alkalizing process darkens the color and typically deepens the flavor.” Dutch process cocoa powder produces baked goods that taste more intensely chocolatey.

What's the difference between baking cocoa powder and cacao powder? ›

So what's the difference? The answer is in the heat. Cocoa powder and cacao powder are very similar, the only difference being that cocoa is processed at a much higher temperature (and often packaged cocoa contains added sugar and dairy).

Why cocoa powder in red velvet cake? ›

Its higher acidity joins forces with the buttermilk and baking soda, resulting in that soft, almost melt-in-your-mouth texture we all love in a cake layer. Natural cocoa powder is lighter in color, which gives a more vibrant red hue to your red velvet cake.

What is the best cocoa powder for hot cocoa? ›

She also recommends Scharffen Berger Chocolate Maker as another solid option for natural—the 100% Unsweetened Dark Chocolate Cocoa Powder—and mentioned the King Arthur Baking Company. The latter has two Dutch-process cocoas she likes—the Bensdorp Cocoa Powder and the Burgundy Cocoa.
